From the eastbank of the Mississippi, headed west for the first time. Staying in Sedona then down to Tucson before heading back. Any guidance on places where I might use a pan and sluce, maybe breakout the gold-bug pro? Nothing to extreme for us or the Subaru! Just a day or two of prospecting.

If you havent already, check out listed claims in AZ that you might want to visit.
Water may be hard to come by, detecting always a choice.

Try Lynx creek in Prescott, AZ. Public gold panning and metal detecting. It's also restricted to just gold panning and metal detecting, no power equipment or sluicing if I remember correctly.
